While many Paso Robles wines are in the high octane camp, more and more producers are figuring out how to produce more balanced and elegant wines. The 2015 Field Recordings Fiction is a pleasing red wine that shows what is now trending in this AVA. TASTING NOTES: This red blend—composed of Zinfandel, Syrah, Mourvèdre, Graciano, Cabernet Sauvignon, Touriga Nacional, and Carignan—is an artful blend exhibiting ripe red fruits, moderate tannins, and a smooth aftertaste.  89 Points Wilford Wong

Field Recordings "FRANC" Cabernet Franc $22.99
Red wine from hidden vineyards across Paso Robles, California. A rustic punch of blueberries, black cherries and red currants with a touch of mint and rosemary. Drink with friends after putting in a hard day's work. Aged for 8 months in neutral French oak barriques.

The Beers!!

DC Brau "Brau Pils" 6 pack cans $13.99
This ideal example of a traditional German pilsner opens with a gently herbal, earthy, and spicy hop-laced aroma, a hallmark of the noble Hallertau Tradition hops. This is quickly chased by rich, cracker-like notes from German heirloom Pilsner malt for a fully balanced nose. An assertive yet restrained hop character allows spicy hop notes to play across the palate while clean malt notes and a neutral lager yeast profile ensure a crisp and refreshing finish.

Center of the Universe "Chameleon" Version II 4 pack cans $15.99
Like the color-changing lizard, the newest year-round beer at Center of the Universe Brewing Co. will change — not in response to the vicissitudes of the environment or the market, but on a six-week schedule beginning March 9. Brewers will use different hop blends for each version of the Chameleon India Pale Ale, while maintaining a consistent grain bill. Because of the wide range of hop varieties, the beer's aroma and taste will change with each version. And so will the color of the cans.Using colors to differentiate the versions rather than numbers, says co-owner Chris Ray, allows the brewery to repeat a beer. And by making smaller-batch IPAs, says his brother and co-owner Phil Ray, they can access scarce specialty hops."We haven't released a year-round beer since Chin Music [in 2014]," Phil says. "This enables us to change up our portfolio and allows our brewers to flex their creative muscles.
