The Cheeses!!

A hard raw cow’s milk cheese aged for over 11 month. The name Après Soleil comes from the unique maturation process for this cheese during which sunlight streams into the cave and alters it’s character. 
Ingredients: raw cow's milk, salt, animal rennet, cultures.

Schlossberger Aged
Schlossberger Alt is raw cow's milk cheese matured for 18-23 months in a cave next to the ruins of Schlossberg Castle, deep in the valley of Emmental. Carefully nurtured to reach its peak maturity. The finished cheese is moderately salty with pronounced hazelnut flavors and a buttery finish. Schlossberger made in the winter (when the cows are eating hay) will take on a paler, more crumbly and bright persona.

Truffle Raclette

All natural, pasteurized cow's milk, semi-hard table cheese infused with black truffle. Decadently delicious with earthy flavors, a hint of cocoa, and a grassy tang finish. Aged for a minimum of 90 days. Pleasant smooth texture which is perfect for snacking, on a sandwich or with your favorite light-bodied red wine.
Ingredients: cultured pasteurized cow's milk, salt, truffle zest (carob powder, black summer truffle) black truffle brisures (black truffle, truffle juice), natural flavoring, enzymes.

Muscadet $12.99

Delicate, textural, and lively with notes of white grapefruit and melon.
Once sipped, notes of lemon peel and lime flood the palate.
No better wine for serving alongside freshly shucked oysters!

Chardonnay $15.99, Russian River Valley
Brilliant yellow gold in color with aromas of green apple and white peach backed by a touch of honey. 
The wine is round, full-bodied and fresh with an elegant creamy texture and a tangy finish.

Nebbiolo, Piemonte $18.99
Brilliant garnet red in color with an aroma of violets, lush berry fruit and plums.
Flavors of ripe red cherry emerge and a touch of spice on the finish.

Cabernet Sauvignon, Alexander Valley $22.99
Begins with a fantastic aroma of black cherry, spice, leather, cedar, vanilla and more.
This full-bodied wine tastes wonderful with lots of dark fruit, good structure and similar notes as the nose plus plenty of cola, licorice and touches of cocoa and tobacco.
This is excellent stuff that gets even better as it has more air. It ends with a dry, long, lip-puckering finish.
Serve it with grilled porterhouse, beefsteak tomato salad
or slices of any big cheese like, Smoked Blue or aged pecorino cheese.
