Once known mostly for Zinfandel, Cabernet Sauvignon is now the most widely planted grape
in Paso Robles and this bottling started it all!

Named American Winery of the Year by Wine Enthusiast,
this winery uses Old World methods — hand-harvesting and small-barrel aging in French oak —
with New World technology. Rich in fossilized limestone from eons of marine deposits,
their soil is ideally suited to creating big, bold reds.
The limestone “stresses” the vines, producing grapes that fully express their varietal character.

"Inviting aromas of ripe dark berries, cassis, chocolate, walnuts and bark.
Full-bodied, succulent and mouth-filling with very fine tannin.
Creamy and velvety with a lingering finish."

Our Thoughts on this wine.....

Deep ruby/purple core, with a black secondary color, lighter toward the rim with moderate plus viscosity and slow-forming, moderately stained tears. Very aromatic and complex with ripe black cherry and cassis fruit, vanilla, cinnamon,
and licorice spice with sweet tobacco, cedar, leather, and camphor notes.
Full-bodied with ripe complex black cherry, boysenberry, cassis,
and blackberry fruit on entry with a baking spice finish.
Dusty tannin appears on the mid-palate with cedar, dried tobacco leaf, and saddle leather as it progresses.
The finish is long, fresh, and balanced with notes of bay leaf, dried red rose petal, oak, and sustained tannin.
