50% Grenache and 50% Syrah

Dark fruits abound!! This wwine "Drinks Up" in our descriptions,
which means it matches the flavor and quality of a wine twice its price!!

Just an hour from the Spanish border, not far off the coast,
we first tasted this small producer in 2005 and
have been happy to be a part of their increasing notariety through the years. 

Aging this Cuvee in small 225 liter Bordeaux barrels for 10 to 12 months
brings out alluring flavors and complexity not usually expected from a Grenache/Syrah blend.

" No maceration carbonique here, all de-stemmed and aged in barriques 225l, 25% new for one year.
More intense black cherry, strawberry and kirsch notes with some wild herbs from surrounding garrigue.
Serious structure with firmer tannins, high acidity and a long, mineral finish."

Our Thoughts on this wine.....

Aromas of light pepper, plum and black cherries lead into amedium to full-bodied wine that has a silky texture and supple tannins.
Hints of red fruit, clove and allspice add complexity on the finish. Drink this beauty over the next few years (2-3).
Pair with rich flavors, like hearty Stews, Cassoulets and Marinated Asian (not too spicy).
Cheese wise, Manchego, Cheddar, Gouda (Smoked), Pecorino and Asiago.
They also love BBQ, Grilled meat like Beef, Veal, Pork and Chicken.

A bit about Castelmaure..

Castelmaure is a cave cooperative founded in 1921. Today it consists of 65 members, 15 of which bring 85% of the production.
The winery is located in the unofficialCorbières cru site of Durban (there is 1 official Cru and 11 unofficial Cru sites in Corbières ),
also known as the high Corbières in the past, reflecting the very steep landscape, typical of the area,
with vines planted from 180 to nearly 400 meters high (90% in Corbières AOC).
The Serre mountain in the south protects the little plateau of Castelmaure from the off-weather patterns of the Mediterranean Sea.

The co-op farms 412 hectares  around the tiny hamlet of Embres et Castelmaure.
Each of the 760 parcels are supervised by a technician who inspects them & records their characteristics.
They have learned new methods for pruning, ploughing, checking yields, sorting & selecting that respectful to the environment.
All the grapes are harvested by hand. This is the only cooperative harvesting 100% of its crop manually with crates, without having the obligation to do so - philosophy is based on quality.
