This wine is vinified using mainly grapes from a single vineyard to the south of the winery. 100% Ruchè grapes, Il Cavaliere is made exclusively in steel and displays great harmony and balance, thanks also to a fascinating aromatic vein. Warm and intriguing, on the nose one can clearly discern hints of violets and roses, hay and vanilla. Warm and characterised by a long aromatic persistence, it does not disdain a few years of ageing in the cellar. Even 10 years and more. Goes well with richly aromatic cuisine. Excellent with game dishes, such as venison, wild boar and hare.
