 "Right at the outset, some of the fruity dry-hopping makes itself clear: kumquat flesh, some lime pith, sweet orange zest, and grassy bitterness for days (while falling well short of astringent). After that, the yeast strain really comes out more: green grape skins, crushed grape seed, a bit of Bosc pear flesh, and underripe nectarine mix and mingle with soft wheat boule, unsalted oyster crackers, and uncooked rolled oats. Right now, this is striking a wonderful balance between yeast phenols, malt, and dry-hopping. As the drink goes on, it opens up a bit and the interplay between sweet fruit tones and dry, grainy malt comes forward, while the pithy bitterness of the hops and the funky yeast phenols settle in toward the back of the palate. The finish is dry, with a pleasant, soft, lingering bitterness. "
