This rosé of maceration is quite unlike other rosé champagnes. Made from a single parcel, a single grape varietal (100% Pinot Noir) and a single harvest. After careful selection and complete de-stemming, a portion of the berries are macerated for less than 30 hours, then blended with juice from the press of the same parcel. This rosé then spends between 3-6 years on the lees prior to disgorgement. A rich, complex and fruity champagne, it pairs well with duck breast, roast chicken, grilled salmon, and a variety of cheeses.
